BMO Cake

Ingredients:
- 250g soft margarine
- 250g caster sugar
- 4 eggs
- 250g self-raising flour
- 2 teaspoons baking power
- Few drops vanilla essence
- Ready Roll Icing- blue, light blue,
red, green, yellow and black
- Icing sugar
- Greaseproof paper
- Jam
(Serves 8-10)
METHOD:
1. Preheat the oven to 180C
2. Grease and line with greaseproof paper a square
baking tin, approximately20cmX20cm.
3. Make your cake mix by creaming the margarine
and sugar. Then beat in the eggs and vanilla essence.
Now sift in the flour and baking powder and mix well.
4. Pour your cake mixture into the prepared baking tin.
Bake for 45 minutes in the centre of the oven.
5. Test the centre with a butterknife to make sure it is
cooked through completely. Then turn out the cake
and leave it to cool.
6. Trim away one side of the cake to make a rectangle
shape. Round off the corners and turn the cake upside
down so the smooth side faces upwards.
7. Dust a board and rolling pin with icing sugar and roll
out some blue ready roll icing, ensuring you keep the
rectangular shape, until it is large enough to cover the
cake.
8. Brush the cake with melted jam to help the icing stick.
Lift the sheet of icing up on the rolling pin and lay it over
the cake. Carefully trima round the edges.
